About Sukiyaki
Sukiyaki is a Japanese hot pot dish of thinly sliced beef cooked at the table in a shallow iron pan with tofu, napa cabbage, mushrooms and shirataki noodles in a sweet soy sauce broth.
The broth, called warishita, is made from soy sauce, sugar and mirin. Each bite of beef and vegetables is dipped in a bowl of beaten raw egg, which cools it and adds richness.
Sukiyaki became popular in the late 19th century, when eating beef became common in Japan. It is a festive dish, often eaten in winter and at year-end parties.
