About Gyoza
Gyoza are Japanese dumplings filled with ground pork, cabbage, scallions, garlic and ginger, wrapped in thin round wrappers and pleated along one side. They are best known as "potstickers", pan-fried and steamed in the same pan.
They are first fried until the bottoms are golden and crisp, then water is added and the pan is covered so the dumplings steam. The result is a crunchy base and a tender top.
Gyoza come from Chinese jiaozi and became popular in Japan in the 20th century. The most popular story says soldiers and settlers returning from Manchuria in China brought the recipe home. They are served with a dipping sauce of soy sauce, rice vinegar and chili oil, and are a favorite in ramen shops. Utsunomiya and Hamamatsu are famous gyoza cities.
