About Maqluba
Maqluba is a Palestinian one-pot dish of rice, meat and fried vegetables, which is flipped upside down onto a large platter when served. The name means "upside-down".
Layers of fried eggplant, cauliflower or potatoes and chicken or lamb are placed in a pot, covered with rice and spices like turmeric and cinnamon, and cooked in broth.
Flipping the pot at the table is a dramatic moment, and the dish should keep its cake-like shape. It is decorated with toasted pine nuts or almonds and served with yogurt and salad.
