About Wiener Schnitzel

Wiener Schnitzel is Austria's national dish: a thin veal cutlet coated in flour, egg and breadcrumbs and fried in butter or lard until golden and puffed up.

The meat is pounded thin and fried so the breading separates from the meat in waves, a sign of a perfect schnitzel. By law in Austria and Germany, a "Wiener Schnitzel" must be made from veal.

It is served with lemon wedges and potato salad, parsley potatoes or lingonberry jam. Pork versions are called "Schnitzel Wiener Art".
