About Krupnik
Krupnik is a thick Polish barley soup made with pearl barley, potatoes, carrots and other root vegetables, usually cooked in a chicken or meat broth. The name comes from krupy, the Polish word for groats.
As it cooks, the barley releases its starch and makes the soup creamy and filling. Dried mushrooms, dill and parsley are often added for extra flavor.
Krupnik is a classic Polish comfort food, especially in cold weather, and is often served with bread. A sweet honey liqueur also has the same name in Poland.
