About Kokoretsi
Kokoretsi is a traditional Greek dish of lamb or goat offal, such as sweetbreads, hearts, lungs and kidneys, wrapped in intestines and roasted slowly on a spit.
The offal is seasoned with lemon, oregano, salt and pepper, and wrapped tightly so it stays juicy. It is roasted over charcoal for several hours until the outside is crisp.
Kokoretsi is a classic dish at Greek Easter, when it is roasted next to a whole lamb. It is also popular in Turkey, where it is known as kokoreç.
