About Greek Lemon Chicken Soup
Greek Lemon Chicken Soup, known as avgolemono, is a comforting soup of chicken broth, rice and shredded chicken, thickened with a mixture of eggs and lemon juice. It is creamy and bright, though it contains no cream.
Avgolemono means "egg-lemon". The key step is tempering: hot broth is slowly whisked into the beaten eggs and lemon juice so they thicken the soup without scrambling.
It is a Greek comfort food, often eaten when someone is unwell and traditionally served after the midnight service on Easter, at the end of the fasting period. Orzo pasta is sometimes used instead of rice.
