About Kimchi Bokkeumbap
Kimchi Bokkeumbap, or kimchi fried rice, is a popular Korean home-cooked dish made by stir-frying cooked rice with chopped kimchi, garlic and often pork, Spam or bacon. It is quick, spicy and full of flavor.
Well-fermented, sour kimchi works best, along with a little of its juice. Gochujang (chili paste), soy sauce and sesame oil add color and depth.
It is usually topped with a fried egg with a runny yolk, chopped scallions, sesame seeds and strips of roasted seaweed. Many Koreans make it with leftovers, making it a classic quick lunch or late-night meal.
