Kimchi Jjigae

About Kimchi Jjigae
Kimchi Jjigae is a spicy, warming Korean stew made with well-fermented kimchi, pork and tofu. It is one of the most popular everyday stews in South Korea.
Older, sour kimchi is used because it gives the stew deeper flavor. It is cooked with fatty pork belly, onions, garlic and gochugaru (chili flakes) before water or stock is added, and soft tofu and scallions go in towards the end.
The stew is brought to the table bubbling in an earthenware pot and shared with rice and side dishes (banchan). Some versions use tuna or Spam instead of pork.
