About Fajitas
Fajitas are strips of grilled meat, usually skirt steak or chicken, served sizzling on a hot iron plate with grilled onions and peppers, and wrapped in warm flour tortillas.
The dish comes from Mexican ranch workers in Texas in the 1930s and 1940s, who were given cheap cuts like skirt steak as part of their pay. The name comes from faja, the Spanish word for belt or strip.
Fajitas became popular in Tex-Mex restaurants in the 1970s and 80s. They are served with guacamole, sour cream, salsa, cheese and lime.
