About Kedgeree
Kedgeree is a British dish of rice mixed with flaked smoked haddock, hard-boiled eggs, parsley and butter, flavored with curry powder.
It is based on the Indian dish khichdi, made from rice and lentils. British officers in colonial India brought it home, replacing the lentils with fish and eggs.
In the Victorian era, kedgeree was a popular breakfast dish in wealthy homes. Today it is eaten for breakfast, brunch or a light supper.
