About Beef Dumpling Stew
Beef Dumpling Stew is a classic British comfort meal: chunks of beef braised slowly with onions, carrots, celery and leeks in red wine and stock, then topped with soft dumplings that steam on the surface of the stew.
The dumplings are made from flour, fat and water, traditionally beef suet, rolled into balls and placed on top for the final half hour. They puff up and absorb some of the gravy, becoming fluffy inside with a slightly firm top.
Herbs such as bay leaf, thyme and parsley add flavor to the rich, dark gravy. This kind of one-pot stew has been cooked in British homes for generations, especially in winter, because cheaper cuts of beef turn tender after a long, slow cook.
