Kaiserschmarrn, a dish from Austria

Kaiserschmarrn

Austria

Also known as Emperor's Mess

About Kaiserschmarrn

Kaiserschmarrn is a fluffy Austrian pancake that is torn into pieces in the pan, caramelized with butter and sugar and dusted with powdered sugar. The name means "emperor's mess".

The batter of flour, milk and eggs is made light by folding in beaten egg whites. Raisins soaked in rum are often added.

It is named after Emperor Franz Joseph I, who is said to have loved it. Kaiserschmarrn is served with plum compote or applesauce and is a favorite in Alpine huts across Austria and Bavaria.
