About Paella
Paella is a famous rice dish from Valencia in eastern Spain, cooked in a wide, shallow pan with saffron, olive oil and various meats, seafood or vegetables.
The original paella valenciana is made with chicken, rabbit, green beans and butter beans. Seafood paella (paella de marisco) is popular on the coast. The rice should not be stirred, so a crispy layer called socarrat forms at the bottom.
Paella is named after the pan it is cooked in. It was traditionally cooked outdoors over a wood fire and is a dish for sharing with family and friends on Sundays.
