About Enchiladas
Enchiladas are corn tortillas wrapped around a filling and covered in a chili sauce. The name comes from the Spanish enchilar, meaning to season with chili. Common fillings are shredded chicken, cheese, beans or beef.
In Mexico, tortillas are usually dipped in sauce and briefly fried before rolling, then topped with crumbled cheese, onion, cream and fresh herbs. Enchiladas rojas use red chili sauce, enchiladas verdes use green tomatillo sauce, and enchiladas de mole are covered with the rich, dark mole sauce.
Rolling food in corn tortillas dates back to the Aztecs. Tex-Mex enchiladas are usually baked in a dish under a thick layer of melted cheese. Enchiladas are served with rice, beans and sour cream.
