Hoppin' John
United States
Also known as Carolina Peas and Rice
About Hoppin' John
Hoppin' John is a Southern American dish of black-eyed peas and rice cooked with onion, bell pepper, celery and pork, usually bacon or ham hock.
The dish has roots in West African cooking, brought to the Carolinas by enslaved Africans. It is part of the Lowcountry cooking of South Carolina.
It is traditionally eaten on New Year's Day for good luck. The peas represent coins and are often served with collard greens, which stand for money, and cornbread, which stands for gold.
