About Garides Saganaki
Garides Saganaki is a Greek dish of shrimp cooked in a tomato sauce and topped with crumbled feta cheese, then baked or simmered until the cheese softens. "Garides" means shrimp, and "saganaki" is the small two-handled pan it is cooked and served in.
The sauce is made from onions, garlic, olive oil and tomatoes, often with a splash of ouzo or white wine, and seasoned with oregano, chili flakes and parsley. The salty feta melts slightly into the sweet sauce.
It is a popular meze in Greek tavernas, especially on the islands and by the sea. The dish is served hot with crusty bread to mop up the sauce and is often enjoyed with a glass of ouzo or wine.
