About German Potato Salad
German Potato Salad, or Kartoffelsalat, is a potato salad dressed with a tangy mix of vinegar, broth, oil and mustard instead of mayonnaise. In the southern German style, it is served warm or at room temperature.
Waxy potatoes are boiled, sliced and mixed while still warm with the dressing, so they absorb its flavor. Fried bacon and onions are often added, along with chives or parsley.
In northern Germany, potato salad is more often made with mayonnaise and pickles. Every family has its own recipe, and it is served with sausages, schnitzel or meatloaf, and as a traditional Christmas Eve dish with sausages in many German homes.
