About Black Forest Cake
Black Forest Cake, or Schwarzwälder Kirschtorte in German, is a layered chocolate cake filled with whipped cream and sour cherries. The chocolate sponge layers are soaked in kirsch, a clear cherry brandy, and the cake is covered in more cream, chocolate shavings and whole cherries.
Kirsch is the key ingredient. Under German law, a cake sold under this name must contain kirsch you can taste. The brandy is a specialty of the Black Forest region in south-west Germany, famous for its cherry orchards.
The cake became popular in Germany in the 1930s and is now one of the country's best-known desserts. Many people believe its colors (dark chocolate, white cream and red cherries) reflect the traditional costume of the Black Forest, with its red pom-pom hats.
