About Cornbread
Cornbread is a quick bread made with cornmeal and baked or fried, a staple of American cooking, especially in the South. It is leavened with baking powder rather than yeast, so it can be mixed and baked in under an hour.
Native Americans were grinding and cooking corn long before European settlers arrived, and the settlers adopted the grain because it grew well. Cornbread became an everyday food across the South.
Southern cornbread is often made with buttermilk and baked in a hot, greased cast-iron skillet, giving it a crisp crust, and traditionally contains little or no sugar. Northern-style cornbread is usually sweeter and more cake-like. It is served with chili, barbecue, beans or greens.
