About Eggs Benedict
Eggs Benedict is a classic American brunch dish of a toasted English muffin topped with Canadian bacon or ham, a poached egg and rich hollandaise sauce.
Hollandaise is made by whisking egg yolks and lemon juice with melted butter until thick and creamy, and is often seasoned with cayenne pepper.
There are several stories about its origin in New York in the late 19th century, including one about Delmonico's restaurant. Variations include eggs Florentine with spinach and eggs Royale with smoked salmon.
