About Grouper Sandwich
The Grouper Sandwich is a Florida classic: a thick fillet of grouper, a mild, flaky white fish from the Gulf of Mexico, grilled, blackened or fried and served on a bun with lettuce, tomato, onion and tartar sauce.
Blackened grouper, coated in a spicy Cajun seasoning and seared in a very hot pan, is especially popular. Fried grouper is coated in a light batter or breading, and the sandwich is often served with fries or coleslaw.
It is a staple of beach bars and seafood shacks along Florida's Gulf Coast. Because grouper became expensive, some restaurants were caught selling cheaper fish under the grouper name in the 2000s, which led to DNA tests and new rules.
