About Chilli Crab
Chilli Crab is Singapore's most famous seafood dish: mud crabs stir-fried in a thick, sweet, savory and mildly spicy sauce made from tomato, chili and egg.
The sauce is cooked with garlic, ginger, chili paste, tomato sauce, vinegar and sugar, then thickened with beaten egg to form silky ribbons. Despite the name, it is not very spicy.
The dish was created in the 1950s by Cher Yam Tian, who sold it from a pushcart. It is eaten with hands and served with fried or steamed buns called mantou for soaking up the sauce.
