About Black Pepper Crab
Black Pepper Crab is one of Singapore's two signature crab dishes, alongside chili crab. Large mud crabs are cut into pieces and stir-fried in a wok with butter and a generous amount of coarsely crushed black pepper.
The sauce is dry rather than saucy, fiery and fragrant. Garlic, shallots, oyster sauce and soy sauce round out the pepper, and some cooks add curry leaves for extra aroma. The heat comes entirely from pepper rather than chili.
It is a messy dish eaten with your hands, cracking the shells to get at the sweet meat. It is a favorite at Singapore's seafood restaurants and is often shared with friends alongside rice or fried buns.
