About Dolma
Dolma is a family of stuffed vegetable dishes from Turkey, the Middle East and the Balkans. The name comes from the Turkish verb dolmak, meaning "to be stuffed".
The best-known version is grape leaves rolled around a filling of rice, onions, pine nuts, currants and herbs such as dill and mint, cooked in olive oil and lemon juice and served cold. Meat versions are served warm with yogurt.
Peppers, tomatoes, zucchini and eggplant are also stuffed and called dolma. In 2017, UNESCO recognized the tradition of making dolma in Azerbaijan as intangible cultural heritage.
