Peranakan Laksa
Singapore
Also known as Laksa Lemak, Katong Laksa
About Peranakan Laksa
Peranakan Laksa is a rich, spicy coconut noodle soup from Singapore, made with thick rice noodles in a creamy, orange curry broth topped with prawns, fish cake, bean sprouts and hard-boiled egg.
The broth is made from a spice paste of dried chilies, lemongrass, galangal, shallots and dried shrimp, cooked with coconut milk. It is finished with chopped laksa leaves (Vietnamese coriander) and a spoon of sambal chili.
The Peranakans, descendants of Chinese settlers who married local Malays, created this blend of Chinese and Malay flavors. In the Katong neighborhood, the noodles are cut short so the laksa can be eaten with just a spoon.
