About Bun Cha
Bún Chả is a Hanoi specialty of grilled pork patties and slices of pork belly served in a bowl of tangy dipping broth with rice vermicelli noodles and fresh herbs.
The pork is marinated with fish sauce, sugar, shallots and garlic, then grilled over charcoal, giving it a smoky, caramelized flavor. The broth is made from fish sauce, vinegar, sugar and water, with slices of green papaya or carrot.
Diners dip the noodles and herbs into the broth with the pork. Bún chả became famous worldwide after US President Barack Obama ate it with chef Anthony Bourdain in Hanoi in 2016.
