About Kartoffelpuffer

Kartoffelpuffer are German potato pancakes made from grated raw potatoes and onion, bound with egg and a little flour, and fried in hot oil until they are crisp and golden at the edges.

The grated potatoes are squeezed to remove as much water as possible, which makes the pancakes crunchier. They go by many names in different parts of Germany, including Reibekuchen in the Rhineland and Reiberdatschi in Bavaria.

Kartoffelpuffer are usually served with applesauce, though some prefer them savory with sour cream, smoked salmon or herbs. They are a favorite at German Christmas markets and fairs, served straight from the pan.
