About Beef Negimaki
Beef Negimaki is a Japanese-style dish of thin slices of beef rolled around scallions, then grilled or pan-fried and glazed with a sweet soy sauce. "Negi" means scallion and "maki" means roll.
The glaze is a teriyaki-style mix of soy sauce, mirin, sake and sugar, sometimes with ginger, cooked until sticky and glossy. Each roll is sliced into bite-sized pieces so you can see the green spiral of scallion inside.
Although it uses Japanese techniques, beef negimaki was created in the 1960s at Restaurant Nippon in New York, to appeal to American diners who wanted beef. It is served as an appetizer or with rice as a main dish.
