About Katsudon
Katsudon is a Japanese rice bowl topped with a crispy breaded pork cutlet (tonkatsu), onions and egg, simmered together in a slightly sweet broth. The name combines "katsu" (cutlet) and "donburi" (rice bowl).
Sliced onions are simmered in dashi broth flavored with soy sauce and mirin, then the sliced cutlet is added and beaten egg is poured over. When the egg is softly set, everything is slid onto a bowl of hot rice, so the breading is partly crisp and partly soaked with broth.
Katsudon is a popular lunch in Japan. Because "katsu" sounds like the verb "to win", students often eat it before exams, and in Japanese TV crime dramas, detectives are traditionally said to offer it to suspects during interrogations.
