About Beef Bourguignon
Beef Bourguignon is a classic French stew of beef slowly braised in red wine with bacon, onions, carrots, garlic, mushrooms and herbs. It comes from Burgundy, a region famous for its wine and beef cattle.
Tough cuts of beef are browned and then simmered for hours in wine and stock until they become very tender and the sauce becomes rich and glossy. Small onions and mushrooms are cooked separately and added at the end.
Originally a peasant dish, it became a symbol of French cooking. Julia Child made it famous in the United States through her 1961 cookbook and TV show. It is served with boiled potatoes, mashed potatoes, pasta or crusty bread.
