About Canelés

Canelés are small French pastries from Bordeaux with a dark, caramelized, almost crunchy crust and a soft, custardy center. They are baked in fluted copper molds, which give them their ridged, cylindrical shape.

The thin batter of milk, egg yolks, sugar, flour and butter is flavored with vanilla and rum and is often rested for a day or more before baking. Traditionally, the molds are coated with a mix of beeswax and butter, which helps create the shiny, crackly shell.

Their origins are linked to Bordeaux's wine trade: winemakers used egg whites to clarify wine, and the leftover yolks are said to have gone into pastries like these. Canelés are a specialty of Bordeaux bakeries and are eaten with coffee or as a sweet snack.
