About Tompouce
Tompouce is a famous Dutch pastry of two layers of puff pastry filled with thick vanilla custard and topped with a smooth pink icing.
It is named after Tom Pouce, the French name of the small performer known as General Tom Thumb, who toured Europe in the 19th century. The pastry is famously hard to eat neatly, and there are many tips for doing it.
On King's Day and other national celebrations, the icing turns orange. Tompouce is one of the most popular pastries in the Netherlands, and Belgium has a similar pastry.
