About Speculoos
Speculoos, or speculaas in Dutch, are thin, crunchy spiced shortbread cookies from the Netherlands and Belgium. They are flavored with cinnamon, nutmeg, cloves, ginger, cardamom and white pepper, and sweetened with brown sugar.
The dough is traditionally pressed into carved wooden molds that create detailed pictures of windmills, animals or Saint Nicholas. The cookies are baked until crisp and golden brown.
Speculoos are traditionally eaten around Saint Nicholas Day on 5 and 6 December. Today they are eaten all year, often with coffee, and the Belgian Lotus brand made them famous worldwide.
