About Shopska Salad
Shopska Salad is Bulgaria's national salad, made with chopped tomatoes, cucumbers, onions and roasted or raw peppers, topped with a thick layer of grated sirene, a white brined cheese similar to feta.
It is dressed simply with sunflower oil or olive oil, vinegar and salt, and garnished with parsley.
The salad was created in the 1950s for Bulgaria's tourism industry. Its white, green and red colors match the Bulgarian flag. It is usually served with rakia, a fruit brandy, before a meal.
