About Sushi
Sushi is Japan's most famous food: vinegared rice combined with raw fish, seafood, vegetables or egg. Popular forms include nigiri (fish on a ball of rice) and maki (rolls wrapped in nori seaweed).
The rice is seasoned with rice vinegar, sugar and salt. Sushi began as a way to preserve fish in fermented rice, but in the 19th century, Edo (Tokyo) street vendors began serving fresh fish on rice, the style known today.
Sushi is served with soy sauce, wasabi and pickled ginger. Sushi chefs train for many years, and today sushi is eaten around the world, from simple conveyor-belt restaurants to famous high-end counters.
