About Shakshuka
Shakshuka is a North African dish of eggs gently poached in a spicy sauce of tomatoes, peppers, onions and garlic, seasoned with cumin and paprika. It is cooked and served in the same pan.
The sauce is simmered until thick, then small wells are made and eggs are cracked into them. The pan is covered so the whites set and the yolks stay soft.
Shakshuka is believed to come from Tunisia, and it is popular across North Africa and the Middle East, especially in Israel, where Tunisian Jewish immigrants made it a favorite breakfast. It is served with crusty bread to mop up the sauce.
