About Sauerbraten
Sauerbraten is a German pot roast of beef marinated for several days in a mixture of vinegar, wine, water, onions and spices like bay leaves, cloves and juniper berries.
The name means "sour roast". After marinating, the meat is browned and slowly braised in the marinade until very tender. The sauce is often thickened with crushed gingerbread or ginger snaps, giving it a sweet and sour flavor.
Sauerbraten is one of Germany's national dishes, with many regional versions. It is served with red cabbage, potato dumplings (Kartoffelklöße) or spätzle.
