About Chiles en Nogada

Chiles en Nogada is a festive Mexican dish of roasted poblano peppers stuffed with a sweet and savory meat filling, covered in a creamy walnut sauce and sprinkled with pomegranate seeds and parsley.

The filling (picadillo) is made from minced meat cooked with fruit such as apple, pear and peach, along with nuts and spices. The white sauce (nogada) is made from fresh walnuts, milk, cheese and sometimes sherry.

Legend says it was created by nuns in Puebla in 1821 to honor a Mexican independence leader, as its green, white and red colors match the Mexican flag. It is served in August and September, when pomegranates and fresh walnuts are in season, around Independence Day.
