About Ramen
Ramen is a Japanese noodle soup of springy wheat noodles in a rich broth, topped with sliced pork, a soft-boiled egg, nori seaweed, green onions and bamboo shoots. It is one of the most popular dishes in Japan.
The noodles came from China in the late 19th and early 20th century, and Japan developed many regional styles. Broth types include shoyu (soy sauce), shio (salt), miso and tonkotsu, a creamy pork bone broth from Fukuoka.
Japan has thousands of ramen shops, and each region has its own specialty, like Sapporo's miso ramen and Hakata's tonkotsu ramen. Instant ramen, invented by Momofuku Ando in 1958, has made it popular around the world.
