About Stir-Fry Udon Noodles with Vegetables
Stir-Fry Udon Noodles with Vegetables, known in Japan as yaki udon, is a dish of thick, chewy wheat noodles stir-fried with vegetables such as cabbage, onion, mushrooms, carrots and peppers, seasoned with soy sauce.
Udon noodles are thicker than most noodles, so they have a satisfying, bouncy texture. A little mirin, sesame oil and sometimes Worcestershire-style sauce give the dish its savory, slightly sweet flavor.
Yaki udon is said to have been created in Kitakyushu in the 1940s, when soba noodles were scarce and udon was used instead. It is a quick home-cooked meal and is often topped with bonito flakes and green onions.
