About Gazpacho
Gazpacho is a cold soup from Andalusia in southern Spain, made by blending raw ripe tomatoes, cucumber, peppers, onion and garlic with olive oil, vinegar and stale bread.
It is served chilled, often with small bowls of chopped vegetables, croutons or ham as toppings. It is refreshing and is often drunk from a glass during the hot Spanish summer.
Gazpacho existed before tomatoes arrived from the Americas, as a simple soup of bread, oil, vinegar and garlic. Salmorejo from Córdoba is a thicker, creamier relative.
