Gambas al Ajillo

Also known as Garlic Prawns
About Gambas al Ajillo
Gambas al Ajillo are prawns cooked in olive oil with plenty of sliced garlic and dried chili, and served still sizzling in a small clay dish. It is one of the most popular tapas in Spain.
The garlic and chili are gently heated in plenty of olive oil to flavor it, then the prawns are added and cooked for just a minute or two until pink. A splash of sherry or lemon juice and chopped parsley finish the dish.
Diners eat the prawns with a fork or toothpick and then dip bread into the garlicky oil left in the dish, which many say is the best part. The dish is especially popular in Madrid and Andalusia.
