About Kaiseki
Kaiseki is a traditional Japanese multi-course meal and one of the highest forms of Japanese cooking. It consists of a series of small, beautifully presented dishes that highlight seasonal ingredients and the skill of the chef.
It grew out of the simple meals served at the Japanese tea ceremony, and later developed into an elaborate dining style. A typical kaiseki includes an appetizer, sashimi, a simmered dish, a grilled dish, a steamed dish, and a final course of rice, miso soup and pickles, followed by dessert.
Each course is carefully arranged on plates and bowls chosen to suit the season. Kaiseki is served at high-end restaurants (ryōtei) and traditional inns (ryokan), and Kyoto is especially famous for it.
