About Jollof Rice

Jollof Rice is a celebrated West African one-pot dish of rice cooked in a rich, spicy sauce of tomatoes, onions, red peppers and chili, seasoned with thyme, curry powder and bay leaves.

The rice absorbs the sauce as it cooks, turning a deep orange-red. Nigerians prize the slightly smoky, crispy layer at the bottom of the pot, known as "party jollof" flavor.

It is thought to come from the Wolof people of Senegal, whose dish thieboudienne is similar. Nigeria and Ghana have a famous friendly rivalry over who makes the best jollof, and it is a must at parties and celebrations.
