About Borscht
Borscht is a hearty, sweet-sour soup from Ukraine, famous for its deep red color from beetroot. It is made with beetroot, cabbage, potatoes, carrots and onions, cooked in a meat or vegetable broth.
Ukrainian borscht is usually made with pork or beef and is often served with a dollop of sour cream, fresh dill and garlic buns called pampushky. Every family and region has its own version.
Borscht is eaten throughout Eastern Europe, but it is especially important in Ukraine. In 2022, UNESCO recognized the culture of Ukrainian borscht cooking as intangible cultural heritage in need of urgent safeguarding.
