About Japchae
Japchae is a Korean dish of glass noodles made from sweet potato starch, stir-fried with colorful vegetables and beef in a sweet and savory sauce of soy sauce and sesame oil.
The noodles are chewy and slippery. Spinach, carrots, onions, mushrooms and bell peppers are each cooked separately and then mixed with the noodles and sprinkled with sesame seeds.
Japchae was first created in the 17th century for a royal banquet, originally without noodles. Today it is served at holidays, birthdays and celebrations, as a side dish or a main meal.
