About Goan Fish Curry
Goan Fish Curry is a tangy, spicy coconut curry from Goa on India's west coast. Pieces of fish are simmered in a bright red-orange sauce of coconut, red chilies, spices and tamarind or kokum, which gives it its sour flavor.
The sauce is made by grinding fresh coconut with dried Kashmiri chilies, coriander, cumin, turmeric, garlic and ginger. Fish such as kingfish, pomfret or mackerel is added at the end and cooked briefly so it stays tender.
In Goa, fish curry with rice ("xit kodi" in Konkani) is the everyday meal, eaten at lunchtime in homes and beach shacks along the coast. Portuguese colonial history also influenced Goan cooking, which is why vinegar appears in many local dishes.
