About Cullen Skink
Cullen Skink is a thick, creamy Scottish soup made with smoked haddock, potatoes and onions cooked in milk. It is warming, smoky and comforting.
It comes from the small fishing village of Cullen on Scotland's north-east coast. "Skink" is an old Scottish word for a soup, originally made from beef shin.
Traditionally it is made with Finnan haddie, cold-smoked haddock from the nearby village of Findon. It is served with crusty bread and is a popular starter on Burns Night.
