About Crepes
Crêpes are very thin French pancakes made from a simple batter of flour, milk, eggs, butter and a pinch of salt. The batter is swirled across a hot, flat pan to make a large, delicate pancake that cooks in about a minute.
They come from Brittany in north-west France. There, sweet crêpes made with wheat flour are distinguished from galettes, savory pancakes made with buckwheat flour and filled with ham, cheese and egg.
Sweet crêpes are often filled with sugar and lemon, jam, chocolate spread or salted butter caramel, a Breton specialty. On 2 February, the French celebrate La Chandeleur (Candlemas) by making crêpes, and in Paris they are a favorite street snack.
